Warm, cheesy, and perfect for sharing, this Cheesy Broccoli & Bacon Cob Loaf is a guaranteed crowd-pleaser! With its creamy, savoury filling and crispy golden crust, it’s made for gathering around with friends and family. Simply scoop, mix, bake, and dive in – because nothing beats a warm, cheesy dip straight from the cob!

Ingredients
1 large broccoli
1 brown onion (diced)
150g bacon (fat trimmed, diced)
1 crusty cob loaf
1 cup grated cheese
100g sour cream
250g cream cheese
1 tbsp onion powder
1 tbsp garlic powder
1 tsp white sugar
1 pinch salt

Fresh chives
Grated cheese
Method
Preheat oven to 180C/160C fan-forced and line a large baking tray with baking paper.
Cut a circle through the top of the cob, making sure to leave a 2cm edge. Scoop bread out from centre of loaf and roughly tear it up. Place cob, and lid on baking tray.
Prepare broccoli by removing florets from stem and steam them in the microwave until tender – roughly 2-3min.
Dry broccoli by placing between two layers of paper towel and using your hands to press down to release any excess moisture. Allow to cool and chop into small pieces.
In a pan on medium heat, fry onions and bacon until soft and slightly caramelised. Remove from heat and cool.
Add all ingredients except the bread to a large mixing bowl and stir until fully incorporated. Microwave the mix for 1min to gently warm.
Fill the cob loaf with warm broccoli mix add extra grated cheese. Place in oven on bottom shelf until golden.
Sprinkle cob with chives and more cheese before serving warm. Enjoy!
