Fish Tacos with Passionfruit Salsa

Light, fresh, and packed with zesty flavour, these Fish Tacos are a fun, hands-on way to enjoy the warm weather! The sweet tang of Genuinely Southern Forests passionfruit salsa perfectly balances crispy pan-fried fish and creamy avocado, all wrapped in warm tortillas. Set up a platter and let everyone build their own—fresh, fast, and perfect for sharing!

Makes 6 tacos

Ingredients

Salsa

2 large passionfruit

2 Lebanese cucumbers

½ white onion

1 handful of fresh coriander (chopped)

1/2 lime

1/2tsp white sugar

1pinch salt

Tacos

1/4 red cabbage

1 handful lettuce leaves

1 avocado

2 large fillets of white flesh fish

6 tortillas (corn or flour)

Garnish

Coriander leaves

Lime wedges

Jalapeno

Method

Cut cucumbers length ways and scrape out the seeds using a teaspoon.

Finely dice cucumber and onion, then add to a small mixing bowl with chopped coriander and passionfruit pulp.

Add salt, sugar and lime juice to taste. Mix with a spoon. Finely slice red cabbage and avocado and lay out on a serving platter.

Slice fish into 2cm-thick strips and season with salt. Pan fry fish on high heat until cooked. Set aside.

Heat tortillas on a pan or in microwave and leave in a warm tea-towel until ready to serve.

To assemble the taco, layer cabbage, lettuce, avocado and fish on top of a tortilla and top with passionfruit salsa, coriander and jalapeno. Serve with lime wedges for an extra tang.

For a more interactive serving style, arrange all ingredients on a platter for guests to help themselves and make their own taco.

Tip: Keeping the tortillas wrapped and warm will ensure they do not dry out before serving.
