Try this delicious KANZI® apple muffin recipe! Perfect for an afternoon snack, a quick breakfast, and the school lunch boxes.
Ingredients
120g of fine granulated sugar
300g of flour
1 tsp baking powder
1 tsp baking soda
Pinch of salt
2 tsp cinnamon
120ml sunflower oil
2 eggs
250ml milk
1 tsp vanilla extract
2 KANZI® apples
Method
Place sugar, flour, baking powder, baking soda, salt and cinnamon together in a bowl, and mix together. In another bowl place the wet ingredients; eggs, milk, sunflower oil and vanilla extract, then whisk together.
Add the contents of both bowls together and mix until combined, this may be a little lumpy. Peel and dice the KANZI® apples and mix them into the batter. If necessary, keep a little behind so you can sprinkle some over the muffins.
Take a muffin tin lined with muffin or cupcake papers. Using a spoon, divide the batter among the molds. With muffins, it’s okay to fill the molds quite full, to about half an inch below the rim. Divide the leftover apple pieces over the muffins.
Bake the muffins for 20 minutes at 200°C, until cooked.
