Apple Turnover

Looking for a weeknight dessert sure to please the kids and warm the soul? Let sweet seasonal apples do all the talking with this no fuss apple turnover.

Vegetarian | Nut free

Ingredients

2 large apples, peeled, cored and diced

1 tablespoon raw sugar

1 tablespoon butter

1 teaspoon cinnamon

4 sheets of puff pastry

2 free range eggs

1 tablespoon raw sugar mixed with 1 teaspoon cinnamon

Method

Preheat oven/air fryer to 180C. Defrost 4 sheets of puff pastry.

In a saucepan, cook half the apple with sugar and a dash of water, until soft.

Add remaining apple with butter and cinnamon. Cook until fragrant. Set aside to cool.

While apple mixture cools, prepare puff pastry by cutting into 10cm x 5 cm rectangles.

Place 2 teaspoons of apple mixture onto half of each rectangle.

Beat eggs and brush onto edge of rectangles before folding pastry over the apple mixture and pressing shut.

Using a fork press around the edges to ensure a firm closure.

Gently prick the top of the parcels with a fork, brush lightly with egg mixture and sprinkle with cinnamon sugar mixture.

Bake in oven or in air fryer for 10 minutes. Turn over and cook for further 5 minutes.

Eat warm as is or with custard or cool and enjoy anytime.
