Sweet Corn Fritters

Corn on the cob gets a crispy, crunchy makeover in this recipe. A blend of fresh ingredients and then lightly fried until golden brown. Serve with sweet chilli sauce or your favourite condiment for dipping!

Makes 6 fritters.

Ingredients:

1 Genuinely Southern Forests sweet corn cob

3 pastured eggs

2 spring onions, chopped

½ cup cheddar cheese, grated

1 tbsp dijon mustard

¼ cup gluten free plain flour

Salt and pepper

Splash of milk

1 tbsp olive oil

Method:

Cook corn (still in husk) in a microwave on high for 3mins (or remove husk and boil for 5mins), set aside to cool.

Once corn is cool, peel the husk and slice kernels off the cob. Set aside.

In a bowl, add eggs and mustard and whisk for 1 minute to combine.

Add the spring onions, cheese, salt and pepper, corn, and flour, and mix well to combine.

Add a splash of milk to create a batter. If it is too dry add a little more.

Warm a frypan and add some olive oil, drop large spoonfuls of batter into the pan.

Flip after a couple of minutes and cook on the other side for a further couple of minutes until cooked through.

Enjoy as is, with an avocado salsa, yoghurt dressing, or your favourite chutney.
