Chipotle Cauliflower Bites

Cauliflower is such a versatile vegetable, which lends itself to all manner of cooking styles and it doesn’t require much work to provide great outcomes. Give this simple recipe for Chipotle Cauliflower Bites a go and serve them with grilled meats, tossed through a salad, or just on their own with a dip.

Serves 4 as a snack or as part of a meal.

Ingredients:

  • ½ cup panko breadcrumbs
  • 2 tbsp chipotle spice mix
  • 30g parmesan
  • ½ head cauliflower, sliced into small florets
  • ½ cup milk
  • ½ cup plain flour

Dressing:

  • 1 cup mayonnaise
  • Zest and juice of a lime
  • 1 tsp dijon mustard
  • ½ tsp honey
  • ¼ tsp salt

Method:

Preheat oven to 200°C. Line a baking tray.

Place crumbs, chipotle and parmesan in a food processor and pulse until the crumb is fine and ingredients are well mixed. Set aside in a medium bowl.

Whisk together the milk and flour and place in a ziplock or sturdy plastic bag. Add the cauliflower and toss to coat, rubbing the batter into the florets. Empty the florets into the crumbs and toss to coat well.

Place florets evenly across the baking tray and place in the oven for 35 minutes, turning once. In the meantime, whisk together dressing ingredients and set aside.

Serve the cauliflower bites hot from the oven and use any leftovers to fill lunchboxes or toss through a salad.
