Gilbert’s Hilton in-store Gourmet Butcher prepares premium cuts of Australian grown beef, lamb, and poultry, including free-range and grass-fed meats from our local farmers.

Save time in the kitchen by trying something from our large selection of ready to cook favourites, prepared by our butcher, and available from the meat fridge. Choose from beef or chicken rissoles, lamb koftas, sausage rolls, house-made sausages, marinated chickens, and a variety of gourmet pies, just to name a few.

At Gilbert’s Midland, our neighbours, Willowbrook Butchery, sell quality cuts of meats and offer a range of prepared meals to help make dinner time easier when life gets busy.  


Our recently introduced seafood fridge has a selection of fresh (not frozen) seafood, such as fresh salmon fillets, prawns (raw & cooked), and prepared salt and pepper squid from local and Australian suppliers, including Kailis Bros and Harris Farm.
